Bonfire night was rescheduled due to football tonight (boo) so normal Thursday activity resumed. After my spin class I had this tasty dish and if totally satisfied me and filled me up. I’m usually so hungry so later could feel the need to snack but with good oily fish I’m always happy.
2 Cod loin filets
tablespoon Philadelphia cheese
Put your fish in an oven proof dish. Sprinkle with salt and olive oil. Dollop half your Philadelphia on each filet, sprinkle with coriander and pop in the oven at 160 degrees for 18-20 minutes.
Meanwhile boil a pot of water, add your brocolli and sprouts and allow to cook for 8 or so minutes.
