We are cheese obsessed in my house, Halloumi is one of the faves. This Cajun chicken and Halloumi is so versatile that it can be eaten with pretty much everything, whenever, wherever. It would be great to cook the night before for a lunch time salad or a post gym snack. I served mine with brown wraps and iceberg lettuce.
2 x chicken breasts diced
1 x red pepper
2 teaspoons Cajun spice
1 teaspoon coconut oil
1 pack Halloumi cheese
Heat your pan and add your coconut oil. Add your chicken and Cajun spice and cook through. Chop your red peppers and add to the pan.
In a seperate pan, add your sliced Halloumi and cook until golden on both sides.
Serve with brown wraps and iceberg lettuce.
