Chicken and Chorizo Risotto

This is such an easy all in one pan dish. It’s great to serve for dinner parties also as you can mix and match the ingredients to suit. This recipe is so creamy and delicious and has very few ingredients.  Risotto is one of my favourite dishes to make and to eat!


3 x chicken breasts diced

2 x chorizo sausages

2 garlic cloves crushed

1 white onion

1 cup arborio rice

300ml chicken stock

150ml milk

1 teaspoon coconut oil 

5g butter

Salt and pepper

1 teaspoon coriander 

1 tablespoon Greek yoghurt 

1 lemon juice


Heat a pan with coconut oil and add your chicken and garlic. Dice your onion and chorizo and mix with your chicken. Add your dry rice and mix well, make sure your rice is coated with the chorizo oil. 

Pour in half of your milk and half of your stock and bring to the boil. Add salt, pepper and coriander and butter. Cover and simmer for 10 minutes. 

Add the rest of your milk and stock, mix well, add your Greek yoghurt and lemon juice. Cover and simmer for a further 10 minutes until all the liquid has been absorbed by the rice. 

Sprinkle with Parmesan to serve.
