Cream of Tomato and Pumpkin Soup

I know Halloween was last week but with all this spare pumpkin lying around I have been trying different recipes. As winter is getting closer a bowl of warming soup is always an option.


2 teaspoons vegetable oil
1large onion, chopped
250ml vegetable stock
1 can chopped tomatoes
2 teaspoons sugar
4 cups pumpkin pureed
1 teaspoon salt and pepper


Add your oil to a pot and add your chopped onion. Add your tomato and pumpkin and season with salt and pepper. Add the stock and sugar and bring to the boil. Allow to simmer for 40 minutes.

Allow to cool and use a hand blender until totally smooth.
