Soup season is definately upon us and I always try different variations to stop myself from getting bored of it. This one combines two of my favourites together.
4 x chicken thighs
3 x sweet potatoes
1 x white onion
3 x carrots
300ml vegetable stock
Salt and pepper
1 red chilli
Bring a pot of water to the boil and add your stock cubes. Boil your chicken thighs for 40 minutes until soft.
Remove your thighs from your pot and set aside. Peel and chop all your vegetables and add to the pot. Slice your chilli and add also.
Season with salt and pepper and allow to simmer for 30 minutes until your vegetables are soft.
Use a handblender to smooth and thicken your soup, add more water if required. Shred your chicken and add to the pot.
Allow to simmer for 10 minutes.
Season with salt and pepper to serve.
