Fiesta Fajitas

Arriba Arriba 💃🏽 I love fajitas and what better when it’s so healthy. This recipe is not the easiest but it’s so worth it. I cooked this for my friends and they were all begging for seconds. 

Ingredients 

Fajitas

6 x chicken breasts

1 teaspoon paprika

1 teaspoon bbq sauce

Salt and pepper

Lime 

Red onion

Green pepper

Salsa 

3 x red tomatoes

2 x yellow tomatoes

Sprinkle coriander

Red onion

Sweet corn 

Salt and pepper

1 x chilli

Guacamole

2 x avocados

1 x yellow tomato

1 x chilli

Lemon juice

Sprinkle coriander

Rice 

1 x cup basmati rice

400 ml water

1 x pepper

1 teaspoon paprika
Method 

Slice all your chicken and add all the ingredients into a bowl. Leave aside to marinade. Squeezing the lime juice in. 

Add all your salsa ingredients into a food processor and blend but keep it chunky. Squeezing the lime juice in. 

Add all your guacamole ingredients into a food processor and blend till smooth. Squeezing the lime juice in. 

To cook the rice heat a shallow pan and add 1 teaspoon coconut oil. Add chilli and 1 cup rice. Toast your rice grains until golden and add the paprika and pepper. Add your water gradually and let it simmer. Once the water has been dissolved and your rice is fluffy transfer to an oven dish to keep warm until serving. 

Meanwhile add your chicken and veg to a pan with 1 teaspoon coconut oil. Cover and allow to cook for 15 minutes or until the chicken is cooked through. 

Hear your tortilla wraps and serve. Olé
