Halloween is here and how could I let it go by without a couple of festive recipes. I’ve been trying out some different recipes this week and will share them with you.
The first is for pumpkin chocolate chip cookies. The classic cookie with a twist.
1 cup white sugar
1 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup pumpkin (puréed in food processor)
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups milk chocolate chips
Sieve your flower and mix all your dry ingredients together.
Beat your butter until smooth and add your sugar and eggs gradually. Mix in vanilla extract and gradually add your pumpkin. Mix well using either an electric whisk or food processor. Add your cinnamon, salt and chocolate chips and mix by hand to prevent chopping the chips.
Mould the dough into cookie shapes and add to parchment paper on a baking tray. Add the baking tray to a preheated over of 160 degrees and bake for 15-20 minutes depending on your cookie size
