Stuffed Peppers

Ingredients 

1 red pepper

1/2 red onion

Handful spinach

Mozzarella cheese

2 eggs

1 rasher bacon

Method 

Cut your pepper in half and put under the grill for 2 minutes. Load your pepper with the fillings and put unde the grill for another 5-7 minutes until golden. 

Serve with Greek youghrt with lemon juice.
