Mango tilapia and coconut quinoa

This tropical dinner is great for post gym. Enough protein and carb to rebuild any muscle. 


1 tilapia fillet

1 tablespoon mango chutney

Sea salt

1/2 cup quinoa 

Fresh prawns



Desiccated coconut

1 teaspoon coconut oil


Heat the oven to 180 degrees. Put your fish in foil and smear on your mango chutney. Close the foil over and put in the oven for 16 minutes. 

Meanwhile heat 1 cup water to 1/2 cup quinoa. Add coconut oil and bring to boil for 2 minutes then let simmer for 10 minutes. 

Add coconut oil to a small frying pan, add mushroom, broccoli and prawns. 

Season fish with salt and pepper.
