Chicken Chasni

I love Indian food but it can be so unhealthy. I always try to make my own versions where I can for a more guilt free meal. This one is so easy and can be made in under half an hour so you’re not spending hours in the kitchen.

3 chicken breasts diced

1 red chilli

1 white onion

3 garlic cloves crushed

1 large chunk ginger

1 teaspoon curry powder

1 teaspoon garam madala

1 teaspoon turmeric

salt and pepper

1 tablespoon mango chutney

1 tablespoon tomato purée

2 tablespoons Greek yogurt

Sprinkle of pilau seasoning

1 cup rice

Heat a deep pan and add your chilli, garlic, ginger and onion. Cook until soft. Add your chicken and all your spices. Add a couple teaspoons of water, cover and cook on a low heat.

Meanwhile bring a pot of water to the boil and stir in your rice. Add your pilau seasoning and simmer for 10 minutes.

Add your mango chutney and tomato purée and mix well. Dollop in your Greek yoghurt and stir, the sauce should now look smooth and creamy. Cover and allow to cook for a further 10 minutes until the sauce is thickened.

Drain your rice and serve.
