Popping candy, popcorn and hazelnut chocolate


My friend is having a fundraiser for the London Marathon next year, I agreed to bake something to take along. I thought about making something healthy with no sugar, no butter blah blah but then I remembered what’s the fun in that 🙊. This chocolate tray requires minimal cooking just a cool in the freezer overnight. Try it out and let me know what you think. 


400g digestive biscuits

30g butter (I used stork)

1 tablespoon golden syrup

350g milk chocolate

75g bag toffee popcorn

20g chopped toasted hazelnuts

20g popping candy


 Crush your digestives until super fine, I used a food processor for mine. Meanwhile melt your butter in a saucepan. 

In a bowl over a pan of hot water melt about 100g of your chocolate. 

Once your digestives are crushed and fine like sugar mix with the butter and add your syrup. Stir in your melted chocolate.

Take a rolling pin and crush your popcorn into small pieces but loosely to keep the, different sized. 

Add 3/4 of your popcorn, your popping candy and hazelnuts to the pan and mix well. 

Smear butter into a deep baking tray and tip in your mixture, flatten it out with your hands, packing it in tight. 

Set in th fridge for 30-40 minutes. 

Once your bake is set remove from the fridge whilst you melt the rest of your chocolate in a bowl over a pot of water. 

Once melted, tip the bowl onto of your tray and smooth out ensuring all the corners and edges are covered. This doesn’t have to be done evenly. 

Finally pour the remaining popcorn and some popping candy over the top and return to the fridge to set. I allowed mine to set overnight but 1-2 hours would be ok if you are making it same day.

To serve cut into pieces and enjoy.
