Paprika Chicken

imageWith this hurricane on its way the dark wet nights make you want something filling and comforting. Too wet to venture to the shops it was a “whatever is in the fridge” type of dinner. Fling this all in the over for 40 minutes and you have a delicious juicy dinner and leftovers for lunch.


5 x chicken breasts

1 chorizo sausage

3 garlic cloves

2 x red onions

3 x peppers

Baby potatoes

Smoked paprika

Sea salt


1 chicken atock

20ml water


Heat your oven to 180 degrees and heat up your bakin tray.

Slice your peppers into strips, chop your chorizo, cut your onions into quarters and half your potatoes.

Once your tray is hot put a tablespoon of coconut oil and allow to spread.

Chuck all your veg and chorizo into the tray, leaving the garlic cloves whole and add your chicken breast to the top.

Crumble chicken stock over and add your water. Sprinkle paprika, salt and pepper over the top and add to the oven for 40 minutes. Checking occasionally.
