It is bitterly cold today. I can’t wait to go home and have a big bowl of carrot and courgette soup. So quick and easy to make and is perfect for midweek lunches.
5 large cartots
1 large courgette
1 tin chopped tomatoes
1 white onion
300ml vegetable stock
salt and pepper to season
Chop your onion, carrot and courgette and add to your pot. Lightly fry in oil.
Add your chopped tomatoes and stock and being to the boil.
Allow to simmer for 40 minutes or until vegetables are soft.
Use a hand blender to thicken and smooth soup and salt and pepper to taste.
