After work even I sometimes don’t feel like cooking. This casserole is the best thing for that. Chuck it all in a pot and in the over for 40 minutes and you have a delicious juicy dish. You can use a whole chicken, legs or thighs but I just used some breast fillets I had in the fridge.
1x sweet potato
3x new potatoes
2x garlic cloves
1 chorizo sausage
300 ml chicken stock cube
Sea salt flakes
Put your pan over the hob and heat slightly. Add your onion, garlic and sliced pepper and let the onion soften slightly. Chop your potatoes into chunks and add. Slice your chorizo and carrots and add to the pot. Allow ingredients to soften. Put your chicken in and season well with salt and pepper. Add your stock cube and put the lid on your pan.
Keep on the hob for a couple of minutes before adding to a preheated oven of 160 degrees.
Cook for 40 minutes stirring occasionally.
