Wholegrain Rice Salad

An easy and healthy lunch packed with nutrients and goodness. Keeping you full til dinner time.

Ingredients

Wholegrain rice and pearl quinoa

abovado

1/2 can sweet corn

1 fresh beetroot

1 carrot

2 x tomato

1/2 lime

feta

Method

Cook 1/2 cup Wholegrain rice and quinoa in boiling water for 10 minutes

meanwhile mash avocado, add tomato chopped small, sweet corn and lime juice and mix well.

Grate beetroot and carrot.

Serve and add feta  sprinkle with chia and you enjoy!
