This rainbow salad is so easy and delicious you could eat it everyday.
1 cup quinoa
1/2 can sweetcorn
sprinkle of chia
Cook your quinoa in 2 cups water, salt and pepper for 10 minutes.
Meanwhile mash your avocado in a bowl and add the lime juice.
Grate your carrot and beetroot and mix together. Chop tomatoes into chunks
Once your quinoa is light and fluffy you’re rest to serve. Add all your ingredients to your plate or Tupperware, top with feta, seeds from your pomegranate and sprinkle with chia seeds.
