I usually make my own meatballs using mince and spices but for quickness I bought Tesco finest meatballs with 94% British beef. I always make my own sauce from scratch as there’s so much more goodness and flavour than what you get from a jar! Try it for yourself and let me know what you think.
20 Tesco Finest meatballs
150 grams spaghetti
Teaspoon coconut oil
2 cloves garlic
Salt and pepper
Teaspoon Balsamic vinegar
Teaspoon Olive oil
Teaspoon Worcester sauce
200ml beef stock
Put your tomatoes, chilli, garlic into a food processor to break them down. Add your coriander, olive oil, balsamic vinegar, Worcester sauce and salt and pepper and blend well to make a paste type consistency.
Meanwhile brown your meatballs in the coconut oil. Once the outsides have some colour tip your sauce into the pan and let simmer for 10 minutes.
Add your beef stock gradually. Bring sauce to the boil and allow to simmer for 20-30 mins until it has thickened.
Cook the spaghetti until soft and add to the meatballs and sauce. Mix well and serve with a sprinkling of Parmesan.
